Think of a Splendid Title...later :)

This is my first post regarding weekly menu planning.

It is kind of like What I Wore Wednesday, but for food.
It is like my own cooking show!

Now, since I am a homebody...and I don't really self perpetuate change,
I hereby VOW to make at least one new recipe a week.

So here is this week's menu:

Monday: Enchiladas
Tuesday: Tacos/Enchiladas Leftover
Wednesday: Soy Glazed Salmon (New Recipe) with
Roasted Asparagus
and Potato and Tomato Galettes (New Recipe)
Thursday: Broccoli Casserole (New Recipe)
with canned Corn and Peas
Friday: Leftovers!
Saturday: Steak Night! Barry cooks!
Sunday: Beef Stroganoff (New Recipe)

Just so you know...I started this venture with large ambitions of
taking beautiful photos of my food. Then one night, I was trying to
take a photo of my food and I realized that people HIRE OTHER
people to make food look pretty...and those people are called food
stylists. And I'm not one of them. :) So, some photos are by me,
others are by...well...others.

Enchiladas with Black Beans and Red Rice

Tacos/Enchilada Leftovers

W e d n e s d a y:
Soy Glazed Salmon with Roasted Asparagus
and Potato and Tomato Galettes


I do not like fish. I like shellfish...just not fish.
Unfortunately Barry loves salmon so we have fish on
occasion. But this glaze is freaking awesome! Love
the glaze, hate the fish. So I will have to find something
else to use this glaze on.



Soy Glazed Salmon Recipe
Potato and Tomato Galettes Recipe


Roasted Asparagus:
-Cut off bottoms of asparagus
-drizzle with olive oil
-sprinkle with salt and fresh crushed black pepper
-bake at 425 for 12-15 minutes, depending on asparagus thickness

Note: The galettes are ok. Honestly, I'd rather just quarter up small
red potatoes, toss in olive oil, sea salt, cracked black pepper, and
rosemary and roast them.


T h u r s d a y:
Broccoli Casserole with canned peas and corn


I used a Betty Crocker (thanks for the book Ashlie!) recipe
that was sooooo amazing. I'll have to write it down here next
time I make it, or I'll just make a singular post. At first I was like
there's no cheese! But it worked out beautifully! I added just
a bit of cheese since I'm an addict.

S a t u r d a y:

Steak Night!

Well...it was supposed to be steak night but we went to
Angie's house and we ended up eating Taco Bell.

Vacation! FINALLY!


Barry and I FINALLY got to go on a vacation! We have
been together over three years now and this is our first official
REAL (not weekend/daytrip) vacation.

My mother was married, in the port of Galveston, on Jan 2nd
and then we all went on the honeymoon cruise! lol


This is our first "at port" day - Nassau, Bahamas.






This is me and Barry in front of the Atlantis resort that I had planned
on being our honeymoon destination but we were traveling with Steve,
who is a travel agent, and he was telling me (as a friend) that
Atlantis is awesome but not all inclusive. So, if you are willing to
pay a ton of money for the room and then pay a ton of money
for food, etc. then Atlantis is fantastic for you.

This is the Queen's Staircase.

Hands down, the most beautiful, awe-inspiring thing
I have seen in a long time.

It was carved out of limestone, by slaves between 1793-1794.
It was made as an escape route in case of pirates, etc.
The route was never used and finally Queen Victoria ended slavery.
The staircase is named for her.



BEACH!!!!!



This is the beach right next to the Atlantis resort. It was just gorgeous.
Unfortunately, the waves were HUGE! :)

I had a lot of fun but if you were caught in the waves you
ended up being pushed UP the shoreline and then
immediately SUCKED back into the ocean. Grown men
would fall and then all of a sudden all of a sudden you
would just see surf and feet. Hilarious, until it happened
to you.

Baby Cloths

So there is this pregnant lady,
and I had planned on making a hat...
and failed.

So I made her some baby wash cloths instead.

:D







Of course I will be making more of these and they
will be available for sale at my Etsy Shop.

I already have some up!

Christmas 2010

So, my tree is exactly the same as last year's.

But there is one new addition:



It's my new tree skirt!

I got it at Target for $40. It was WAY more than I was
planning on spending but since I've been searching for
the PERFECT tree skirt for about three years now, I didn't
want to wait until the after Christmas sales only to find out
that they sold out.



Last year I didn't really get a full tree photo so
there you go.
